Fall! I can't wait. I LOVE fall - halloween, pumpkin patches, jack o lanterns, tractor rides, breezy days w/ swirls of leaves around. Every fall, I have to buy a few pairs of bath & body works shea butter socks. They are thick, cozy & make your feet so soft. I put body butter on my feet first so they get extra moisturizing goodness. They have really cute ones this year.


They also have pink poodle shea butter socks. They are supposed to last up to 25 washes. I've never really paid attention to how long they last. They are a splurge at $8.50 each but worth it. Even my hubby likes them.
Another thing I like about fall - pumpkin bread! Here is my super healthy (no oil or butter!), moist & yummy recipe.
Souly's Pumpkin Bread - Makes 2 loaves

1 cup whole wheat flour

1/2 cup wheat germ (use all purpose flour if you don't want to use wheat germ)

2 1/2 cups unbleached all purpose flour

1 1/3 cup dark brown sugar (I use 1/2 raw sugar and 1/2 brown sugar)

2 t. baking soda

1 t. salt
-
2 t. cinnamon (I love vietnamese cinnamon - use less though, its much stronger)

1/2 t. nutmeg

1/2 t. ground cloves

1 1/2 cup unsweetened applesauce

2 cups pureed pumpkin

4 eggs
Combine dry ingredients. Combine applesauce, pumpkin and
eggs separately and add to dry. Stir just until combined. Bake at 350 degrees
for 50-60 minutes.

1/2 - 1T. unsalted butter (optional)
-
cinnamon & sugar mixture (optional)
Melt butter and brush over loaves. Sprinkle with cinnamon
& sugar.

I looooove silly fluffy socks in the fall in winter...I had a whole drawer that I finally threw away because they were getting so worn. Just means I get to buy some more. :D
